Hoppy Easter Brownie Recipe

These rich, gooey Hoppy Easter brownies are the perfect Easter treat. Crispy on the top, gooey in the middle and decorated with yummy Easter treats! This is the ULTIMATE gooey brownie recipe that will keep you coming back for more.

To make the brownies you will need:

3/4 cup plain flour
1/4 cup cocoa powder
3/4 cup brown sugar
1/2 cup caster sugar
175 g butter, melted + cooled
150g chocolate, melted + cooled
100g chocolate, roughly chopped
1 tsp vanilla extract
3 eggs (room temp)
Pinch of salt

To decorate:

100g chocolate, melted
Your choice of yummy Easter treats to decorate! (I used mini eggs, malteser bunnies and rainbow sprinkles)

Directions

To prepare, pre-heat the oven to 160º celsius (fan-forced) and line a 20cm square baking tin with baking paper.

First, melt 150 grams of chocolate and set it aside to cool down. Then melt 175 grams of butter and set it aside to cool as well.

In a large bowl whisk eggs, sugars, cooled melted butter and vanilla essence together until fluffy and light in colour.

Then, whisk in the cooled melted chocolate.

Next, sift in the flour, cocoa powder and salt then fold it in until it is just combined - do not over mix it!


Then, fold in 100 grams of chocolate chunks.


Finally, pour the brownie mixture into your prepared baking tin. 


Bake for 35 minutes or until the brownie is cooked to your liking (I prefer mine gooey!) Allow the brownies to cool before cutting.

Once your brownies have cooled completely, break 100 grams of chocolate into pieces and melt in the microwave in 30 second bursts, stirring in between. Allow the melted chocolate to cool slightly, then drizzle it on top of the brownies.

Now you can decorate the brownies with your choice of yummy Easter treats - I chose mini eggs, malteser bunnies and rainbow sprinkles

Notes:

Brownies will keep in an airtight container for up to a week. Heat up in the microwave for 30 seconds for a warm, gooey treat!
